Ham, cheddar cheese, onions, green peppers, and mushrooms (optional)

Turkey, Monterey Jack cheese, bacon bits, avocado sauce, mushrooms, red onion, green peppers sautéed.

Who knew June 23, 2018, would be my last outing with my Aunt Gale. We had had many

adventures together with many laughs. She was my best friend and confidant. I remember her

saying, “Carole, we gotta go to this amazing place, it’s so cute and yummy! Its crepes served

out of a vintage trailer. Gale, Mary and I got there, and the place did not disappoint! The

crepes were wonderful, and the environment was amazing. I longed to go back with Gale and

Mary. We never got the chance, as Gale passed away of cancer almost a year later. She spent

most of her time left in hospitals and care centers. Luckily, I was able to visit her often.

I made each visit count. We laughed, we talked about everything, but most of all, we savored each moment.

In 2020, I purchased my vintage trailer with the plan to turn it into my gypsy in the wind trailer.

I planned to travel across country. However, inspiration came to me to convert my trailer into a

small crepe bistro. But what to name it? My aunt had taught me to be fearless. When I

perform standup comedy on stage, my alter ego is Stella. I have no fear as Stella. So, Stella’s Crepes was born.

I want to share my creations with everyone. I desire to give the experience I had with my aunt.
